What is Bean-to-Bar?

Bean-to-bar refers to the full spectrum artisanal approach of crafting chocolate entirely from cacao beans to the final bar. This method ensures greater control over the quality, flavor, and ethical sourcing of the raw materials. 

Our cacao beans are sourced from the Dominican Republic and are carefully hand sorted to ensure the highest quality beans are selected. After sorting, the beans are roasted at precise temperatures to draw out the rich chocolatey flavor. They are then crushed into smaller pieces (nibs) and sent through a process called winnowing, which separates the nibs from the outer husks. The nibs are then combined with other ingredients in a stone grinder for several days (up to 72 hours) to achieve a smooth texture. In order to produce the crisp, shiny finish, the chocolate must be carefully tempered (heating and cooling to specific temperatures) to ensure the correct type of cocoa butter crystals form. Finally, the chocolate is poured into the molds, left to set for 20 minutes, and voila!  

The whole bean-to-bar process can take up to a week to complete but is worth the extra effort to ensure the use of high quality ingredients and sustainable materials.
